It reuses the menu's CSS custom properties (--brand, --accent, --card, --muted,
--ink) so it matches the catering site palette automatically.
Servings heuristic:
• If a tray option shows a "Serves N" / "Serves N–M" / "Serves up to M"
label (rendered from CateringItemSize::serves()/TrayType::servesLabel()),
the calculator reads the CONSERVATIVE (lower) number so guests are never
under-catered.
• If no label is present it falls back to the tray name: full ≈ 22,
half ≈ 11, quarter ≈ 6, individual/single ≈ 1, otherwise 15.
